The Best Wonton Soup

Last week I made J. Kenji Lopez-Alt’s The Best Wonton Soup from The Wok.

This is apparently THE recipe for Superior Stock, but, to me, the wontons were the the best part. 4 stars ★★★★☆

Last week I made J. Kenji Lopez-Alt’s The Best Wonton Soup from The Wok.

This appears to be THE recipe for Superior Stock.

The wonton filling is ground pork, garlic, ginger, sugar, soy sauce, roasted sesame oil, chives, and a single small shrimp.

Kenji instructs to put a tablespoon of filling plus one shrimp in each wonton. I got the smallest Georgia Atlantic shrimp available at Your DeKalb Farmers Market, but even those were too big. I think they were around 40-50 per pound. I got half a pound and had around the right amount of shrimp, but I ended up cutting them in half to get them to fit in the wonton. And I had to go a little smaller than a tablespoon of filling to go with that shrimp piece.

The wonton wrapping went fine. I got the wontons at Super H Mart, which had multiple brands to choose from.

The Superior Stock is brought to a boil and then the wontons and some bit-sized Napa cabbage are added and boiled until the wontons are cooked through. Chives and scallions are added, and that’s it!

The soup was good. The broth was good, but I don’t know if it was all-the-work-of-Superior-Stock good. To me, the best part of the soup were the wontons. They were delicious. I think the broth could have used some more salt, but it also was a nice balance to the flavorful wonton filling.
